
No Bull! Buffalo! The 2012 International Bison Conference will take place July 21 to 27, 2012 at the Québec City Convention Centre. The event, which is a joint venture between the Canadian Bison Association and the American Bison Association is the major convention for producers of Bison meat products, Bison by products and Bison enthusiast. Bison (also known as the American Buffalo) has become known as a high protein/low carbohydrate meat product with a flavor similar to beef, but sweeter and richer. According to the website of the American Bison Association, bison producers can be found in all 50 states, every Canadian province, and in several countries overseas. The 2002 Census of Agriculture reported that approximately 4,000 private ranches today house 232,000 head of bison across the United States. Approximately 25,000 additional animals are kept in public herds. And, the Canadian herd is estimated at 150,000 head.”
